Curry Powder for Red Meat

Ingredients Quantity 

  • 1 tablespoon ground nutmeg 
  • 2 tablespoons ground cumin 
  • 4 teaspoons paprika 
  • 3 teaspoons whole cloves 
  • 6 Black cardamom pods
  • 3 teaspoons fennel seeds 
  • 6 tablespoons coriander seeds 
  • 4-6 Black long peppers (alligator pepper) 


  1. Roast whole spices for 8 minutes at 170c in the oven oven or dry panfry carefully untill fragrant.
  2. Remove seeds from the black cardamom pods, discard pod casing then process in a mortar and pestle or spice grinder to a fine powder. Combine with the ground spices.
  3. Store in low light in sealed containers for up to 2 months.
